Cauliflower creamy soup with supertopping

STEP 1 : INGREDIENTS

- 1 kg of Cauliflower
- 1 tbsp of coconut oil
- Canned Coconut miilk
- 1 cube or tsp, of vegan broth (our super Nopal broth for instance)
- 4 cm of fresh ginger
- Salt & pepper
- 4 tbsp of Super topping "Exotic"
STEP 2 : RECIPE
Clean the cauliflower and detail in florets.
In a large pan, melt the coconut oil and place the cauliflower, stir during 3-4 minutes.
Add coconut milk, broth and ginger pulp, slightly grated, cover with water.
Bring to boil, lower the heat and let it simmer until the cauliflower gets tender (20 min. more or less).
Transfer into the blender, keeping aside a big glass of the cooking broth, add salt & pepper, mix to get a homogeneous creamy soup, adjust the texture by adding some of the cooking water glass.
Serve warm and sprinkle a tablespoon of Exotic super topping over each bowl...
